Chole Bhature – The Quintessential Indian Food

If you ever had to admit your favourite cheat meal, it has to be the rich, delicious Chole Bhature. The North Indian meal of deep-fried bread maida from maida paired with spicy chana masala is definitely one of our favourite dishes to binge on.

Be it a hearty breakfast meal, a lovely lunch snack which calls for an afternoon siesta or a great dinner dish with the gang, Chole Bhature is always the life of the party. It is hard to find the right mix of spices that click with everyone and rare are the places that crack the code of this holy-grail of Indian street food!

Here is a simple recipe!

Ingredients

  • 250 gm boiled chickpeas
  • 250 gm tomatoes
  • 500 gm onions
  • 10-12 cloves garlic
  • 2-3 chilli
  • 1 inch ginger
  • 4-5 strings of pudina
  • 3-4 black pepper
  • 2-3 long
  • 1 tbsp red chili powder
  • 2 tbsp oil
  • 1 tbsp salt
  • 1 tbsp Punjabi Chole masala
  • 1 tbsp chopped coriander

 

For Bhature

  • 500 gm Refined flour
  • 100 gm Wheat flour
  • 1 tbsp crush jeera
  • 2 tbsp oil for moan
  • 1 tsp salt
  • 100 ml water
  • As needed Oil for frying

 

Steps

  1. First mix all the ingredients of Bhature and knead a dough....(loose)..keep it aside.
  2. Let's prepare gravy for Chole. For that chopped onions and tomatoes..take it in a mixie jar and add chopped garlic and chillies. And a piece of ginger....
  3. Then add some dry ingredients into mixie jar...long, cinnamon and black pepper.... add some water and Crush them altogether...to make gravy..
  4. Now take 2 tbsp oil in kadai or pan, add jeera and tej patta,also pinch of asfoetida and red chilli powder.....Then pour gravy and cook it for 10 minutes....until its raw taste gone. Stir it well...and cook it.
  5. Add boiled chole(chickpeas) in it...and stir it.. add masala in it...red chilli powder, Chole masala and salt to taste....Stir it well and cook for 10 minutes.
  6. Off the flame and took out in a serving bowl...Garnish it with coriander and raw onion rings.
  7. Now take oil in a kadai for Bhature...knead the dough and make little equal portions from it.
  8. With the help of Roller and pin roll Bhature...(almost size of chapati)Fry it..
