Uttapam – South Indian Pancakes

One of the most popular and mouth-melting South Indian dishes is the pancake type uttapam. Uttapam are savory pancakes with crispy golden edges and pillowy soft center topped with veggies. Accompanying a lot of health benefits with it, this delicacy is low in fat but high in flavours. Traditionally served as breakfast in India, wholesome Uttapam makes for a quick and satiating meal.

You can see this dish in almost every South Indian home. It is quite easy to make and requires not too many ingredients. Uttapam has not only become a favourite all over India, it is also appreciated by visitors from other countries. 

For this uttapam recipe, you need to soak the poha or methi seeds, lentils and rice and grind to form a thick batter. The batter should be then fermented overnight. It is the vegetables on the toppings that make uttapam look colourful like a pizza.

So let’s get into this easy to make uttapam recipe.

Time needed:

  • Preparation time for making the batter: 1 hr
  • Fermentation time: 8 hour
  • Cooking time: 20 minutes

Ingredients:

For batter

  • 3 cup dosa rice/sona masuri rice
  • 1 cup urad dal
  • 2 cup puffed rice
  • ½ tsp methi or fenugreek seeds
  • 1 ½ tsp salt

For onion toppings

  • 2 onion finely chopped
  • 2 green chilli finely chopped
  • 1-inch ginger finely chopped
  • 2 tbsp coriander finely chopped
  • Few curry leaves finely chopped
  • ½ tsp salt

How to make uttapam recipe:

  • Take a large bowl and add two onions, two chilli, 1-inch finely-chopped ginger, few curry leaves, 2 tbsp coriander and ½ tsp salt and mix well.
  • On the stove, heat the dosa tawa and pour a ladleful of uttapam batter.
  • Spread the batter in a circular motion. The spreading should not be done much as it should be thicker than the regular dosa.
  • Sprinkle the onion toppings and press gently so that the toppings stick finely into the batter.
  • Now add 1 tsp of oil around the uttapam.
  • Cover it and let it cook for 1-2 minutes in low flame.
  • Flip over the other side when the uttapam turns golden brown.
  • Your uttapam is ready to serve with coconut chutney.
